deploy(compose): volume uploads in sola lettura nel container vision (#38)

Il worker di visione legge le immagini di riferimento già caricate dal
server, non le scrive. Montato :ro su entrambi i compose (prod e dev).
GIF/WebP animati nelle miniature: MANCA, decisione di prodotto.
